FARMERS are encouraging people to celebrate the humble spud by taking part in National Potato week.
This year the week focuses on the maris piper, the most commonly grown potato in the UK and a much-loved variety.
Robin Cropper’s family have farmed potatoes for generations at Moss End Farm in Ormskirk.
Robin runs the 488 hectare farm with his brother John and together they produce around 6,000 tons of the maris piper variety each year.
As a single dad with three young children Robin comes up with innovative recipes every day that show how quick and easy potatoes are to cook with.
Robin said: “Potatoes are a great staple for any meal. They’re both delicious and nutritious and I love including them in all kinds of dishes that I make.
“The kids love them too, which is the main thing; sometimes kids can be so fussy but potatoes are a real crowd pleaser and go with practically anything.
“Maris pipers are a classic variety of potato, a consistent all-rounder, making great wedges, chips and especially roasties with that classic crunchy outside and fluffy middle we all know and love.
“My favourite recipe is the one pan Mediterranean roast chicken with potatoes and peppers.
“It’s inspired by roast dinners and makes a great supper.”
One Pan Mediterranean Chicken, Potatoes and Peppers
750G maris piper potatoes peeled and quartered.
8 chicken thighs
150g diced chorizo
1 red onion cut into wedges
carrots, cut into chunks
2 stalks rosemary
20 baby tomatoes
large handful of olives
1, Preheat the oven to 220°C/gas 7 while you prepare vegetables and chicken.
2. Pop the potatoes in a microwaveable dish and pour over 2tbsp of water. Cover with cling film and pierce a hole in the top. Microwave on high for 5 mins,
3. Put the chicken, chorizo, peppers, onions, carrots, rosemary and olive oil in a large roasting tray.
4. Add the partially cooked potatoes and toss everything together. Squeeze the lemon juice over, season and put in the oven for 30 mins.
5. After 30 minutes, turn everything around in the tray and add the tomatoes and olives and return to the over for 15mins or until the potatoes are golden and cooked through.
