Leslie's Recipe of the Week - Easter Biscuits
 

AS IT’S Easter coming up, and the Children are still enjoying their rest! Plus a day running around in the rain (sun)! Easter Biscuits are a favourite in our household with old and young alike, really easy to make so they are perfect for children’s participation, and they taste really delicious too!

INGREDIENTS

75g margarine

100g caster sugar

1 egg

½ tsp baking powder

150g plain flour

1 tsp mixed spice

50g currants

 

METHOD

Pre-heat oven to 170c.

Grease 2 baking trays.

In a large bowl beat together the sugar and margarine until pale and thick.

Add the egg and continue to whisk. Mix in the currants.

Sift in the flour, baking powder and mixed spice fold to make a firm dough.

On a floured surface roll out the biscuit mix to approximately 3mm.

Cut out the biscuits with a 6cm round cutter ad place on the baking trays.

After 10-15 minutes remove from the oven and dust with caster sugar.

Ready to serve when cool!
