Recipe of the Week - 08/05/14

Lesley Yates-Cinti from Roberto's Restaurant in Southport gives her recipe of the week for 08/05/14 - Mixed Paella!

Lesley's Mixed Paella

INGREDIENTS:

1Kg Chicken Thighs – skin removed,

Olive Oil,

1 Onion,

2 Cloves Garlic,

2 handfuls chopped Parsley,

1 Chicken Stock Cube,

1 litre boiled Water,

125ml White Wine,

100g Chorizo Sausage ripped,

200g Chopped Tomato,

1 Pepper, any colour sliced thinly,

500g Risotto Rice,

125g Fine Green Beans,

150g Langoustines or King Prawns,

100g Squid Tubes,

sliced into rings,

250g Monkfish Tail or white Cod, sliced,

500g Mussels in their shell

 

METHOD:

Saute one chopped garlic clove in 1tbsp of the oil. Add the chicken thighs and gently fry for 10 minutes turning all the time. Add one handful of the parsley with the stock cube, and fry for a further five minutes. Add the water, cover and simmer for 10 minutes. Remove the chicken when it is cooked in the middle then remove to drain. Keep the stock on a very low heat covered.

In another pan saute the chopped onion and the remaining chopped garlic clove, add the sliced green pepper, chopped tomatoes and the ripped chorizo. After five minutes add the wine, gradually stir in the rice glazing it thoroughly. Next add the chicken thighs.

Ladle by ladle add the hot stock to the rice, topping up a ladle at a time as it is absorbed.

Meanwhile in a separate pan very gently saute the monkfish or cod in a table spoon of olive oil with the parsley for three minutes, remove from the pan and set aside. Add the mussels, squid and prawns with the green beans, season and cover. Very gently steam for 5 minutes.

When the rice has absorbed all of the stock check before you season as some stock cubes can be quite salty.

Add all the seafood to the paella and mix. Serve immediately with half a lemon.
