Recipe of the Week - 29/05/14

Lesley Yates-Cinti from Roberto's in Southport brings us her recipe of 29/05/14 - Cantuccini Biscotti!

Here is my Recipe for Cantuccini Biscuits. They really are easy - and will make you incredibly popular amongst family and friends!

As it’s Food Festival Weekend I shall be demonstrating how to bake them on Friday, May 30 at Southport Market also on Saturday and Sunday at Princes Park where the Food Festival is being held.

CANTUCCINI BISCOTTI

INGREDIENTS:

100g Dark Brown Sugar

1 Large Egg

½ tsp Baking Powder                                  

175g Plain Flour

1 tsp All Spice

75g Cranberries

55g Shelled and Unsalted Pistachio Nuts

30g Shelled Almonds

 

METHOD:

Pre-heat Oven to 170c

In a large bowl beat the sugar and egg together until pale and thick.

Add the nuts and cranberries.

Sift in the flour, baking powder and all spice and mix to a firm dough.

On a floured surface shape the dough into two flat sausage shapes approximately 2cm deep and 20cm long.

Bake for 20 minutes.  Remove from the oven and leave to cool for 3 minutes, then cut into 1cm strips.  Arrange on the baking sheet and cook for a further 10 minutes.
